RFC (Rita's Fried ... Well baked actually) Chicken

During the lockdown, I am cooking for Paul every night and Ben almost every night unless he is working late.  I am used to Paul working away for 4-5 weeks in every 9 and Ben often being at his dad's or his friends house.

Anyway, I don't mind cooking but find deciding what to cook every evening quite tiresome so have started to ask Paul and Ben over dinner, what they would like for dinner the next evening.

Ben said he would like something like a KFC, I used to make a recipe that I borrowed from Jamie using Polenta but I am currently on a Keto (Low Carb) diet so do not have polenta in the house.  I therefore was left with a challenge to make something that tasted like KFC and my idea worked, so am passing it on - if anyone wants to give it a try.

Ingredients
(serves 3)
2 chicken breasts

Coating
Salt (I use Himalayan Pink salt) - large pinch
Black pepper - large pinch
1 tsp Parmesan (Tesco hard cheese in a pot works) 
1/2 tsp Garlic powder
1/2 tsp Piri Piri Powder
1/2 tsp Ground Smoked Paprika
1/2 tsp Cajun spice
1/2 tsp Cumin
1 tsp dried breadcrumbs (no necessarily keto friendly!)

Mix the coating ingredients together.  Cut chicken in to 1/2" cubes … or so they are roughly an equal size and coat.  Place in a greased tray and bake for about 30-40 minutes until the chicken is cooked.  Easy way to satisfy the teenagers.

I served it with home made chips - cut potatoes into chip sizes (I don't bother to peel them), soak in cold water for a couple of minutes to remove starch, then place in a greased (I use olive oil) tray.  Shake to coat potatoes, I then add a combination of either salt, parmesan, smoked paprika, mint or rosemary - I am sure there are many other options that would work) and bake at 180 C for approx. 1 hour.

Vegetable's - I also roasted and used cauliflower leaves with a dash of Olive Oil, salt and pepper, carrots halved, broccoli, cauliflower, chilli finely chopped and a couple of garlic cloves chopped.  Bake tray for about 30 minutes.
